Description
Shiraz from Lyndoch Barossa Valley, this wine was made with 15% Saignee, cold maceration
for 5 days and after fermenting in small open top fermenters the wine spent up to 12
months in selected new and older fine grain American oak.
The 2023 Bison Shiraz offers distinctive varietal characters of lifted white pepper aroma,
dark berry fruit, plum and savoury spice. It displays a well-balanced palate structure,
powerful tannins and well integrated oak, the best balance between varietal fruit character,
complexity and structure.
